Ingredients:
- 1 ½ – 2 tablespoons of “Essentials” microgreens
- 1 medium apple, cored and chopped
- ½ inch piece of fresh ginger, peeled and grated
- ½ cup cucumber, chopped
- ½ cup spinach
- ½ cup coconut water or water
- 1 tablespoon lemon juice
- Honey, maple syrup, or (pitted) date, to taste (optional)
- Ice cubes (optional)
Instructions:
- Wash the “Essentials” microgreens, apple, cucumber, and spinach
- In a blender, combine the microgreens, chopped apple, grated ginger, chopped cucumber, spinach, coconut water (or water), and lemon juice
- Add honey or maple syrup if desired for added sweetness
- Blend until smooth, adjusting the consistency with more coconut water or water if needed
- For a colder smoothie, add ice cubes and blend until smooth
- Pour into glasses and serve immediately, optionally garnishing with a sprinkle of grated ginger and chopped “Essentials” microgreens on top
