“Tropicana” Smoothie

Ingredients: 

  • 1 ½ -2 tablespoons of “Essentials” microgreens 
  • 1 ripe banana
  • 1 cup frozen mango chunks
  • ½ cup frozen pineapple chunks
  • ½ cup spinach 
  • ½ cup coconut water or coconut milk 
  • ¼ cup orange juice 
  • Honey, maple syrup, or (pitted) date, to taste (optional)
  • Ice cubes (optional) 

Instructions: 

  1. Wash the “Essentials” microgreens and fruits 
  2. In a blender, combine the kale microgreens, radish microgreens, ripe banana, frozen mango chunks, frozen pineapple chunks, coconut water or coconut milk, and orange juice
  3. Add honey or maple syrup if desired for added sweetness
  4. Blend until smooth, adjusting the consistency with more coconut water or milk if needed
  5. For a colder smoothie, add ice cubes and blend until smooth
  6. Pour into glasses and serve immediately, optionally garnishing with a wedge of pineapple and chopped “Essentials” microgreens on top
