Ingredients:
- 1 ½ – 2 tablespoons “Essentials” microgreens
- ½ cup cherry tomatoes, halved
- ½ cucumber, sliced
- ¼ cup red onion, thinly sliced
- ¼ cup feta cheese, crumbled
- ¼ cup toasted walnuts
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the “Essentials” microgreens, cherry tomatoes, cucumber slices, red onion slices, crumbled feta cheese, and toasted walnuts
- In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, salt, and pepper to create the dressing
- Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly
- Serve immediately or refrigerate and enjoy chilled!
